Chicory

Common chicory (Cichorium intybus), also known as blue daisy, is a perennial herbaceous plant frequently found on roadsides in its native Europe where it is well-known for its health benefits. The plant has a history reaching back to ancient Egypt when it was used as a tonic for liver and gallbladder disorders.

Chicory is nowadays used as a bitter tonic and cholagogue agent, promoting the flow of bile into the duodenum. Chicory root has a mild laxative effect and is also used to support the liver function and to improve digestive health.

Uses as natural remedy

Chicory is a rich source of vitamins, such as A, B6, C, E and K as well as minerals such as zinc, magnesium, manganese, calcium, iron and inulin.

Both the roots and the aerial parts of the chicory plant are used for medicinal purposes. The root is rich in fiber that improves the digestive health and stimulates the gallbladder bile production.

In foods, chicory leaves - with a slight bitter taste - are mainly eaten as a salad vegetable, while the roots and leaf buds are boiled and eaten. Chicory is also used as a cooking spice, to flavor foods and beverages. Chicory root is commonly used to make a coffee alternative, as it has a similar taste and color.
