Vitamin C

Vitamin C, also known as ascorbic acid and ascorbate, is an essential water-soluble nutrient and one of the main antioxidants of the body. It facilitates glucose, folic acid and some amino acids metabolism. Vitamin C can neutralize free radicals and enhances iron absorption from the gastrointestinal tract.  

Vitamin C is vital for collagen synthesis and plays an important role in immune function helping  white blood cells work more efficiently, having positive effects on skin health and shortening wound healing time.

Insufficient vitamin C intake causes scurvy, a condition characterized by fatigue or lassitude, widespread connective tissue weakness, bleeding gums and capillary fragility. In the long term, the vitamin C deficiency may lead to atherosclerosis, hypertension or gallbladder disorders.

Food sources rich in Vitamin C

Fruits, particularly citrus fruits, fruit juices, and many vegetables are excellent sources of vitamin C. The recommended intake of vitamin C can be obtained by consuming a variety of foods, such as lemon, orange, grapefruit, kiwi, red and green bell peppers, broccoli and spinach.

Other foods rich in vitamin C include papaya, Brussels sprouts, currants, strawberries, cauliflower and melon. Cranberries and hot peppers are also important sources of vitamin C.

Boiling and foods storing significantly reduces the vitamin C content.
